Ingredients
- pasta noodles of choice 7 ounces
- lean ground beef 1 pound
- onion) 0.5 small
- bell pepper) 0.5 unit
- zucchini) 1 unit
- celery stalks) 2 unit
- carrot) 1 unit
- garlic paste or minced garlic 0.5 tablespoon
- parsley 1 tablespoon
- oregano 1 tablespoon
- 14.5 ounce can crushed tomatoes 0 unit
- can tomato sauce 8 ounce
- low fat cottage cheese 1 cup
- skim mozzarella cheese 1 cup
- parmesan cheese 0.25 cup
- egg 1 large
- salt & pepper 0 unit
Steps
- Preheat the oven to 350 degrees and arrange oven safe containers on a cookie sheet. Spray lightly with cooking spray.
- Cook your pasta according to package directions in salted water. Set aside.
- Cook your beef over medium high heat until it is no longer pink. Turn off the heat and strain out the grease.
- Return heat to medium high and add in the vegetables, garlic, and spices. Cover and cook 3-5 minutes until the veggies are slightly tender.
- Stir in tomatoes, tomato sauce, cottage cheese, parmesan cheese, 1/2 cup mozzarella, pasta, and the egg.
- Evenly dump the lasagna into the containers and top with remaining cheese.
- Bake for 30 minutes.
- Let cool before covering with lids and placing in the refrigerator for up to 5 days.
- Reheat in the microwave for 2-3 minutes.
